Simply Delicious Eggs

Servings: 8

Ingredients:

  • 10 eggs
  • 1 cup plain yogurt
  • 1 cup cottage cheese
  • 1 1/2 cup grated cheddar cheese (reserve 1/2 cup to spread over top)
  • 1-2 Tbsp of green chili sauce, to taste
  • 2 cups hash brown potatoes
  • 3 parsley sprigs (optional)

Instructions:

  1. Preheat oven to 350

  2. Spray a 9x11" pan with Pam or similar product

  3. Spread thawed, drained potatoes in the pan

  4. Blend the other ingredients in a blender until smooth

  5. Pour over the potatoes

  6. Sprinkle top with 1/2 cup of cheese

  7. Bake for 30 minutes or until the eggs have set

  8. Artistically arrange parsley on top before serving
